On the 15th day of Christmas... Ginger Cupcakes

Hello everyone! I have recently been getting really into baking and thought I would make some cupcakes with a Christmas twist. I chose to add ginger to it to give it a little bit of a kick. The amount I have added is just a guideline, you can add more or less depending on what your preference is. Here's what I did:

You will need:

125g of unsalted butter
125g of caster sugar
2 medium eggs, lightly beaten
125g self-raising flour
2 tbsp of ginger
1 tbsp of milk
Cupcake cases

Why not follow these steps:

Preheat your oven to gas mark 5 and line a 12-hole muffin tin with cupcake cases.

Cream the butter and caster sugar together until light and fluffy.


Add the beaten eggs.


Sift the flour and ginger and fold it into the mixture.



The mixture should now have a soft, dropping consistency, however, if it feels a little dry, add a tablespoon of milk.


Spoon the mixture into the cases, with each case being about two-thirds full.


Bake for 12 to 20 minutes until a light golden brown colour. Once baked, leave to completely cool.
