Food Friday - Baked Eggs
Hello everyone and welcome to the first Food Friday post. As part of my new routine, I am going to be alternating Food Friday and Fitness Friday posts which I'm really looking forward to so if you have any suggestions please comment or tweet them to me.
As I mentioned in my aim's of 2016 post, I am trying to cut out Gluten, so the recipes I use are going to incorporate that. Today's recipe is a delicious breakfast that is packed with protein and is based on serving four.
You will need:
2 tbsp of olive oil
1 tbsp of unsalted butter
150g of mixed chopped mushrooms
8 large eggs
250 ml of whole milk
100g of grated Gruyère
1/2 tsp of paprika
A few springs of oregano
Salt and pepper
First of all preheat your oven to gas mark 4 so that it is lovely and warm by the time you need to use it and grease four ramekins with half of the olive oil.
Heat the remaining oil, along with the butter in a frying pan with medium heat. Add in the mushroom and a pince of salt before frying until tender.
Beat four of the eggs in a mixing jug and add the milk, seasoning with salt and pepper.
Fill the ramekins with the fried mushrooms before pouring the beaten egg over the top of them. Crack an egg on the top of each of the ramekins and place them on a baking tray.
Top with Gruyère and then bake for about 12 minutes by which time the eggs should have set.
Add a pinch of paprika and a sprig of oregano before enjoying.
