I'm back with another Food Friday post and today's recipe is perfect for eating after working out at the gym to help your muscles repair.
To achieve this yummy Gluten Free breakfast for 4 you will need:
12 small eggs
55g of unsalted butter
2 medium avocados
100g of thinly sliced feta
100g baby spinach
Salt and Pepper
First of all whisk together three eggs in a mixing bowl and season with salt and pepper.
Heat 1 tbsp of butter in a small frying pan on moderate heat until hot.
Add the beaten egg to the pan and leave to set slightly.
It's now time to add slices of the avocado, feta and a small handful of spinach. Flip the omelette over to cover the spinach. Cover the pan with a lid and leave to cook for a minute.
All that's left to do is dish up and enjoy. Remember to add a fresh tbsp of butter for each omelette you make to ensure you don't burn them!
